Emulson Blender

Updated October 26, 2013: I just cracked the code on an eggless model of mayo that is virtually nearly as good as this one. The primary time I made do-it-yourself mayo I used the EVOO and as you talked about, it was not superb. I've made it with great success with the store bought mayo and it needs to be even higher with homemade blender mayo. Let me know the way you like the mayo with the light olive oil. I put all of the ingredients within the blender as much as the primary 1/four cup of oil and blended it for 20-30 seconds. I then put the remaining cup of oil in the blender and thought I had been drizzling it out of the measuring cup I had used.

Neither the elements nor the technique for Homemade Paleo Olive Oil mayo are unusual or tough - however mixing up a batch does demand, at least for me, a unprecedented amount of persistence. The magic of mayo is that it is an emulsion: the oil and egg+lemon juice create a colloid (whats up, fifth grade science!).
